- 1 1/2 c. sugar
- 1/2 c. cold water
- 1 Tbsp. light corn syrup or 1/4 tsp. cream of tartar
- 2 egg whites
- 1 tsp. vanilla extract
Directions

1Break egg whites into mixing bowl.

2Put sugar, water and corn syrup into a small saucepan; stir over low heat until sugar dissolves.

3Boil rapidly until the syrup can be formed into soft ball when

4a little is dropped into cold water (238°).

5Remove from stove.

6Beat egg whites quickly until stiff.

7Continue beating, while pouring the hot syrup in a fine stream over the egg whites.

8Add flavoring and continue beating until the mixture is stiff enough to spread on cake.
