  • 3/4 c. rice
  • 1 quart. water (4 c.)
  • 1/4 teaspoon salt
  • 1 quart. & 2 c. lowfat milk
  • 1 c. sugar
  • 3 Large eggs
  • 1 teaspoon vanilla

Directions

    Boil together rice, water and salt.

    Boil till water is just about absorbed and rice is fluffy.

    Add in 1 qt and 1 c. (5 c.) lowfat milk and sugar.

    Let boil till it thickens.

    Beat Large eggs and add in 1 c. lowfat milk and vanilla.

    Fold the egg mix into the rice.

    Chill.
