- 1 Tbsp. each: curry powder
- 1 tsp. ground cumin
- 1 can (19 oz/540 mL) chickpeas (garbanzo beans), drained
- 1/2 cup raisins and/or chopped dried apricots
- 1-1/2 cups each: Minute Rice Brand Rice and chicken broth
Directions

1HEAT oil in large frypan.

2Add onion, zucchini, carrots, pepper and spices; cook until vegetables are tender.

3STIR in chickpeas, raisins and broth; bring to a boil.

4STIR in rice; cover and let stand 5 min.
