  • 2 tsp. oil
  • 1 each: onion, zucchini, carrot, red pepper, chopped
  • 1 Tbsp. each: curry powder
  • 1 tsp. ground cumin
  • 1 can (19 oz/540 mL) chickpeas (garbanzo beans), drained
  • 1/2 cup raisins and/or chopped dried apricots
  • 1-1/2 cups each: Minute Rice Brand Rice and chicken broth

Directions

    HEAT oil in large frypan.

    Add onion, zucchini, carrots, pepper and spices; cook until vegetables are tender.

    STIR in chickpeas, raisins and broth; bring to a boil.

    STIR in rice; cover and let stand 5 min.
