- 1 medium carrot, chopped
- 1 medium red pepper, chopped

- 1 tsp. ground cumin
- 1 can (15 oz.) chickpeas (garbanzo beans), drained
- 1/2 cup chopped dried apricots
- 1 can (14-1/2 oz.) low sodium chicken broth
- 1-1/2 cups MINUTE White Rice, uncooked
Directions

1Heat oil in medium nonstick saucepan on medium-high heat.

2Add carrots, peppers, onions, zucchini and seasonings; cook and stir until vegetables are tender.

3Add chick peas, apricots and broth; bring to boil, stirring occasionally.

4Stir in rice; cover.

5Remove from heat.
