- 2 lb. beef for soup
- 1 marrow bone
- 6 c. water
- 2 beef bouillon cubes
- 1 tsp. salt
- 1 bay leaf
- 1 can tomato paste (6 oz.)
- 1 bunch beets
- 2 c. chopped cabbage
- 1 c. chopped onion
- 1 c. sliced carrots
- sour cream
Directions

1Trim all fat from beef; place beef and bone in deep pot.

2Add water, bouillon cubes, salt and bay leaf.

3Bring to a boil; skim. Cover and simmer 1 hour until beef is almost tender.

4Remove beef, bone and bay leaf.

5Cut beef into bite pieces, return to simmering stock.

6Stir in tomato paste.

7Add vegetables.

8Bring to a full boil, cover, then simmer 1 hour longer.

9Serve in large soup bowls topped with sour cream.
