- 1/2 c. whole wheat flour
- 1/4 c. all-purpose flour
- 1/4 c. cornmeal
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. buttermilk
- 1/4 c. molasses
- 1 beaten egg white
- 1 tsp. oil
- 1/4 c. raisins
Directions

1In a medium bowl, stir first 6 ingredients together.

2Stir in next 4 ingredients until blended.

3Stir in raisins.

4Spray 4 to 4 1/2 cup mold or 7 1/2 x 3 1/2 x 2-inch loaf pan with nonstick spray.

5You can:

6(A) bake bread 45 to 50 minutes at 350° or (B) after pouring batter into mold or pan, cover tightly with foil. Put mold or pan on a rack in Dutch oven and pour 1-inch of water around pan.

7Bring water to a boil and simmer 2 to 2 1/2 hours, adding water as needed.

8Remove from Dutch oven and cool on rack 10 minutes.

9Remove from pan.

10Serve warm.
