  • 1/2 c. whole wheat flour
  • 1/4 c. all-purpose flour
  • 1/4 c. cornmeal
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 c. buttermilk
  • 1/4 c. molasses
  • 1 beaten egg white
  • 1 tsp. oil
  • 1/4 c. raisins

Directions

    In a medium bowl, stir first 6 ingredients together.

    Stir in next 4 ingredients until blended.

    Stir in raisins.

    Spray 4 to 4 1/2 cup mold or 7 1/2 x 3 1/2 x 2-inch loaf pan with nonstick spray.

    You can:

    (A) bake bread 45 to 50 minutes at 350° or (B) after pouring batter into mold or pan, cover tightly with foil. Put mold or pan on a rack in Dutch oven and pour 1-inch of water around pan.

    Bring water to a boil and simmer 2 to 2 1/2 hours, adding water as needed.

    Remove from Dutch oven and cool on rack 10 minutes.

    Remove from pan.
