- 1 c. sifted all-purpose flour
- 1 c. white corn meal
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 3/4 tsp. baking soda
- 1 c. whole wheat flour
- 1 egg, slightly beaten
- 2 Tbsp. butter, melted
- 2/3 c. dark molasses
- 1 2/3 c. buttermilk
- 1 c. shredded Cheddar cheese
- 1/2 c. raisins
- 1 Tbsp. flour
Directions

1In a small bowl, sift together flour, corn meal, baking powder, salt and baking soda.

2Stir in wheat flour.

3Combine egg, butter, molasses and buttermilk.

4Add to dry ingredients along with cheese and stir only to blend.

5Toss raisins with the 1 tablespoon flour; stir into batter.

6Pour batter into a 9 x 5 x 2 3/4-inch buttered loaf pan.

7Cover top of pan with double thickness of aluminum foil.

8Place in shallow baking pan. Surround loaf pan with water.

9Bake in a preheated oven of 350° for 2 hours.

10Remove from oven and cool for 10 minutes.

11Serve warm with butter.
