Boston Fish Chowder

Ingredients
- 1 lb. haddock or cod fillets
- 3 c. cold water
- 2 slices bacon
- 1 chopped onion
- 3 medium potatoes, cut in 1/2-inch cubes
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 c. hot milk
- 2 Tbsp. butter
- 1 tsp. dried parsley
- pinch of dried dill
Directions

1Cover fish with cold water and bring to boiling.

2Use water for fish stock.

3Fry bacon until crisp; remove from pan.

4Brown onion in hot bacon fat.

5Cut potatoes into cubes and add to fried onions.

6Strain fish stock into onions and potatoes and cook until potatoes are soft (10 minutes).

7Flake cooked fish and add to potatoes.

8Add milk, butter and seasonings and reheat.

9Sprinkle parsley and dill and bacon bits on top before serving.
