Ingredients

  • 2 lb. navy pea beans
  • 9 c. cold water
  • 3 tsp. dry mustard
  • 5 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. molasses
  • 3 Tbsp. vinegar
  • 1/3 c. chili sauce
  • 1 large onion
  • 3/4 lb. salt pork

Directions

    Wash beans and leave in water to soak 8 hours or overnight. Bring to boil and cook until tender.

    Mix mustard, salt, pepper, sugar, molasses, vinegar and chili sauce.

    Add to beans; add onion.

    Cut salt pork into slices; scald with hot water.

    Drain and add to beans.

    Bake at 375° for approximately 4 hours.

    Add more boiling water during cooking if beans seem dry.
