- 1 cup Cornstarch
- 2- 1/2 teaspoons Pumpkin Pie Spice
- 2 teaspoons Salt
- 10 cups Water
- 3 Tablespoons Lemon Juice
- 6 pounds Your Favorite Apples

1You will need 7 quart-sized canning jars with lids and rings.

2Prepare your water bath (for the assembled jars of apples) according to standard canning practices.

3In a large pan, mix sugar, cornstarch, and pumpkin pie spice.

4Add salt and water and mix well.

5Bring to a boil and cook until thick and bubbly.

6Remove from heat and add lemon juice.

7Sterilize canning jars, lids and rings using standard canning practices.

8Peel, core, and slice apples.

9Pack the sliced apples into the hot canning jars, leaving a 1/2 inch head space.

10Fill jars with hot syrup, and remove air bubbles with a knife.

11Put lids on and process in a water bath for 20 minutes.
