Ingredients
- 1 lb. red kidney beans
- 2 1/2 c. chopped onion
- 6 carrots, cut in 1-inch pieces
- 1 lb. Monterey Jack cheese, cubed
- 12 oz. tomato paste
- 1 1/2 tsp. garlic salt
- 3 1/2 tsp. chili powder
- 1 Tbsp. salt
- 1/4 tsp. pepper
Directions

1Rinse beans.

2Cover with water; boil 2 minutes.

3Let stand 1 hour, then simmer, covered, 50 minutes until beans are tender. Add all the rest of the ingredients except cheese.

4Simmer 30 minutes until carrots are done.

5Stir in cheese just before serving.
