Bowtie Pasta Salad

Ingredients

  • 6 oz farfalle or bowtie pasta
  • 1/2 cup store-bought Italian dressing
  • 2 tbsp fresh parsley leaves, chopped
  • 2 tbsp fresh mint leaves, chopped
  • 1 tbsp fresh lemon juice
  • 1 None large tomato, diced
  • 1 None scallion, trimmed and sliced
  • 1/2 cup frozen peas, thawed
  • 1/2 cup arugula, thinly sliced
  • 1/4 cup small basil leaves

Directions

    Cook pasta in boiling salted water until al dente. Drain then rinse under cold water until cool.

    Meanwhile, whisk together Italian dressing, herbs and lemon juice. Add cooled pasta along with remaining ingredients and toss to combine. Season.
