  • 6 ounces farfalle pasta
  • 1/2 cup Italian dressing store-bought
  • 2 tablespoons fresh parsley leaves chopped
  • 2 tablespoons fresh mint leaves chopped
  • 1 tablespoon fresh lemon juice
  • 1 large tomato diced
  • 1 scallion trimmed and sliced
  • 1/2 cup frozen peas thawed
  • 1/2 cup arugula thinly sliced
  • 1/4 cup basil leaves small

Directions

    Cook pasta in boiling salted water until al dente. Drain then rinse under cold water until cool.

    Meanwhile, whisk together Italian dressing, herbs and lemon juice. Add cooled pasta along with remaining ingredients and toss to combine. Season.
