- 2 tablespoons olive oil
- 2 garlic bruised
- 1 onion chopped
- 3 carrot chopped,, rolling cut is nice
- 1 rosemary fresh sprig, chopped or 1/2 tsp dried rosemary<
- 1 zest
- 1 lemon
- 1/2 cup apple juice
Directions

1Heat the oil in a frypan over high heat. Add the garlic and onion and cook for 2 minutes.

2Add the carrots, rosemary and lemon zest and cook for 2 minutes more.

3Add the apple juice and cook for 3 more minutes, until almost all of the liquid has evaporated.
