- 1/2 pound belgian endive sliced in rings
- 1 small apples, red delicious diced
- 2 tablespoons lemon juice fresh
- 2 teaspoons walnut oil
- 1 pinch salt
- 1 x black pepper to taste
- 1/2 cup water
- 2 tablespoons apple cider vinegar
- 1 tablespoon parsley leaves freshly chopped
Directions

1Place all ingredients except vinegar and parsley in a large skillet.

2Remove cover, cook 2 minutes more until water evaporates.

3Continue cooking over medium heat 5 minutes.

4Stir in vinegar.

5Garnish with parsley.
