  • 1/2 pound belgian endive sliced in rings
  • 1 small apples, red delicious diced
  • 2 tablespoons lemon juice fresh
  • 2 teaspoons walnut oil
  • 1 pinch salt
  • 1 x black pepper to taste
  • 1/2 cup water
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon parsley leaves freshly chopped

Directions

    Place all ingredients except vinegar and parsley in a large skillet.

    Remove cover, cook 2 minutes more until water evaporates.

    Continue cooking over medium heat 5 minutes.

    Stir in vinegar.
