  • 2 tablespoons olive oil
  • 1 bunch kale, washed stemmed and roughly chopped
  • salt and pepper
  • crushed red pepper flakes
  • 6 garlic cloves, finely chopped
  • 2 cups chicken stock
  • 12 lemon, juice of
  • 1 small onion, thinly sliced
  • 1 (10 ounce) package frozen corn, defrosted

Directions

    Heat a large deep skillet over medium heat, add oil and onion cook stirring occasionally for 2 minutes.

    Add garlic and crushed red pepper flakes.

    Cook stirring occasionally for 1 minute.

    Add kale, corn, stock and salt and pepper to taste.

    Cook stirring occasionally for 10 minutes.

    Add lemon juice, stir and cook 1 more minute.
