Braised Lamb Shanks

Ingredients
- 4 lamb shanks
- 4 cloves garlic
- 1/4 c. fat
- 1/4 c. flour
- 2 c. water
- 1 tsp. salt and pepper
- 1/2 tsp. Kitchen Bouquet
Directions

1Cut a vertical slit 1 1/2 inches deep in each shank; insert a clove of garlic.

2Roll shank in mixture of 2 tablespoons flour, 1 teaspoon salt and 1/4 teaspoon pepper.

3Brown in fat; remove shanks.

4Add 1/4 cup flour to fat and blend.

5Stir in butter. Cook until thick, stirring.

6Season with salt, pepper and Kitchen Bouquet.

7Add shanks to gravy.

8Cover; bake in moderate oven at 350° for about 1 1/2 hours.

9Serve with Raisin Rice.
