Braised Lamb Shanks

  • 2 lamb shanks
  • garlic, fresh giner,
  • star anise
  • 1/2 cup diced carrots
  • 1/2 cup sliced onions
  • 1 cup chicken broth or white wine
  • Handful of barley
  • cooking oil

Directions

    In a heavy pot, brown lamb shanks in some oil.

    Remove lamb.

    add onions, carrots, garlic (last)
  4. 4
    gently saute' aromatics and carrots till soft.
  5. 5
    Add wine/or broth. 2 star anise, barley
  6. 6
    Return the lamb to the pot
  7. 7
    bring dish to simmer and cover. after an hour, add salt/pepper to taste.

    continue cooking until meat falls off the bone. Remove bones, and continue simmering until barley is soft.

    Serve hot with cooked rice.
