Ingredients
- 100 grams, dried Lentils
- 2 tbsp Onions (minced)
- 1 tbsp Olive oil
- 200 ml Water
- 2 tsp White wine vinegar
- 2 tsp Salt
- 1 to tatse Pepper
- 1 Bay leaf
- 1 Hot water
- 1 Black peppercorns
- 1 Extra virgin olive oil (for finishing)
Directions

1Soak the lentils in plenty of water for about 30 minutes.

2Rinse to discard impurities and drain in a sieve.

3Fry the finely chopped onion in olive oil without burning.

4After the onion has softened, add the lentils and ingredients.

5Simmer over low heat and skim off the scums.

6As the cooking liquid evaporates, add enough hot water to submerge the lentils.

7Add hot water in 2-3 batches.

8Simmer until there's no scum on the surface for about 30 minutes.

9Sprinkle with black pepper and drizzle with the extra virgin olive oil.

10Serve.
