Braised Onion Sauce

  • 1/2 lb. unsalted butter
  • 1 1/2 lb. onions, peeled and sliced (about 6 medium onions)
  • 1 Tbsp. sugar
  • 1/4 c. Madeira wine
  • grated cheese
  • 3/4 to 1 lb. pasta

Directions

    Melt butter.

    Add onions and cook them over medium heat until they are soft and transparent.

    Stir in the sugar; reduce the heat and cook, very slowly for about 1 hour.

    Stir in the wine; cook briefly and pour over cooked pasta.

    Sprinkle with grated cheese.
