Braised String Beans

Ingredients

  • 2 lb. fresh string beans
  • 1/4 c. oil
  • 2 (8 oz.) cans crushed tomatoes
  • 2 medium onions, chopped
  • 2 Tbsp. chopped parsley
  • 1 c. water

Directions

    Cut off ends of beans and wash in cold water.

    Cut into pieces or slice lengthwise.

    In medium saucepan, saute onions in oil until tender.

    Add remaining ingredients.

    Cover and simmer. Cooking time is 1 hour.

    Makes 6 to 8 servings.
