- 2 lb. fresh string beans
- 1/4 c. oil
- 2 (8 oz.) cans crushed tomatoes
- 2 medium onions, chopped
- 2 Tbsp. chopped parsley
- 1 c. water
Directions

1Cut off ends of beans and wash in cold water.

2Cut into pieces or slice lengthwise.

3In medium saucepan, saute onions in oil until tender.

4Add remaining ingredients.

5Cover and simmer. Cooking time is 1 hour.

6Makes 6 to 8 servings.
