- 1 chicken, cut into pieces
- 3 Tbsp. olive oil
- 4 medium shallots, minced
- 1/2 c. dry white wine
- 1/4 c. tarragon vinegar
- 2 medium tomatoes, peeled, seeded and chopped
- 1 Tbsp. dried tarragon
Directions

1Salt and pepper chicken pieces.

2Heat oil in a large skillet. Add chicken and cook over medium-high heat, searing about 12 minutes on each side.

3Remove chicken and keep warm.
