Braised Turnips

- 1 1/2 lb. small turnips
- 3 Tbsp. butter or margarine
- 3/4 c. beef broth
- 1 Tbsp. fresh lemon juice
- 2 Tbsp. parsley, chopped
Directions

1Peel turnips and cut into 1/2-inch thick slices.

2Melt butter in a skillet and add turnips.

3Cook over low heat until barely tender.

4Add beef broth; cover and simmer over low heat until turnips are tender, about 15 minutes.

5Remove lid and allow some of the broth to cook down, leaving a small amount of sauce. Sprinkle with lemon juice and chopped parsley.

6Makes 4 servings.
