Braised Wilted Chard

Ingredients
- 3 slice thick cut bacon, cut into smaller pieces
- 1/4 cup diced onion
- 2 clove garlic, minced
- 1 bunch swiss chard, cleaned
- 1/8 tsp ground nutmeg or to taste
- 3 tbsp sunflower seeds, shelled & roasted
Directions

1Throughly clean chard.

2Remove any bruised areas.

3Cut the chard in half, separating the stem from the leaf part.

4Slice the stem & combine with the garlic & onion.

5Reserve the leaves.
-
6In a deep skillet or shallow wide pot, fry the bacon pieces until crispy.

7Remove the bacon & drain on a paper towel, keeping the bacon grease in the skillet.

8To the hot grease add the swiss chard stem, garlic, & onion mixture.

9Saute until tender on medium heat.

10Add salt & pepper.

11While the mixture is cooking, tear the leaves into smaller pieces.

12Feel free to leave the ribs in the leaf mixture.

13They are quite nutritious & will get tender like the stems.

14Add the leaves to the top of the stem mixture.

15Sprinkle with nutmeg & more salt & pepper, if desired.

16Cover with a lid & cook on medium for 2-3 minutes.

17Remove lid.

18Using tongs mix all well.

19When leaves are wilted & harder ingredients are softened the dish is ready.

20Just before serving; mix in the bacon pieces & roasted sunflower seeds.

21Try different types of onions to give the dish some delicious variations!
