  • 1 cup plain low-fat yogurt (1%)
  • 1/4 cup butter, melted
  • 1 egg, beaten
  • 1 cup each: 100% wheat bran high fibre cereal and all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp. cinnamon
  • 3/4 tsp. baking soda
  • 1 cup chopped peeled apple

    COMBINE yogurt, butter and egg in large bowl.

    Add cereal; let stand until softened

    COMBINE remaining dry ingredients; stir into cereal mixture only until moistened.

    DO NOT OVER MIX.

    Fold in apple.

    SPOON into greased muffin pan, filling each cup three-quarters full.

    BAKE at 400F (200C) for 16 to 18 minutes.
