Bran Muffins

Ingredients

  • 2 c. Kellogg's All-Bran cereal
  • 1 c. Nabisco 100% Bran cereal
  • 1 c. boiling water
  • 2 eggs, beaten
  • 1 1/2 c. sugar - 1 Tbsp.
  • 1 pt. buttermilk
  • 1/2 c. shortening (Crisco)
  • 2 1/2 tsp. soda
  • 1/2 tsp. salt
  • 2 1/2 c. flour

Directions

    Pour boiling water over both cereals.

    Stir and add shortening and sugar while still warm so all ingredients will dissolve.

    Add rest of ingredients in order given.

    Raisins, dates or nuts may be added before baking.

    Bake 20 minutes in a 400° oven.

    Cover dough and store in refrigerator.

    Will keep up to 6 weeks in fridge. Makes about 3 dozen muffins.
