  • 4 c. Raisin Bran
  • 1 c. sugar
  • 2 1/2 tsp. baking soda
  • 2 1/2 c. flour
  • 1/2 c. chopped walnuts
  • 1 tsp. salt
  • 2 beaten eggs
  • 1/2 c. oil
  • 2 c. buttermilk

Directions

    Mix the first 6 ingredients together in a large bowl.

    Make a well in the center.

    Beat together the wet ingredients; add to flour mixture, stirring just until moistened.

    (Batter will be thick.)

    Mixture may be stored in the refrigerator up to 3 weeks. Bake in muffin tins for 20 to 25 minutes at 375°.

    Yields 40 muffins.
