Ingredients

  • 1 c. boiling water
  • 1 c. ALL-bran cereal
  • 2 c. other bran cereal
  • 1 1/2 c. sugar or Splenda (sugar substitute)
  • 2 1/2 c. unsifted all-purpose flour
  • 2 1/2 tsp. soda
  • 1 tsp. salt
  • 2 beaten eggs
  • 1/2 c. melted butter
  • 2 c. buttermilk

    Pour boiling water over all-bran.

    Set aside.

    Mix the other dry ingredients.

    Add eggs, butter and buttermilk.

    Beat until well mixed.

    Add the hot cereal.

    Bake the number of muffins needed at 400° for 20 minutes.

    Place the remaining batter in an airtight container and keep in the refrigerator.

    Batter will keep for 6 weeks.
