- 1 c. all-purpose flour
- 1/2 tsp. salt
- 2 Tbsp. butter or shortening
- 1 egg, beaten
- 3/4 c. milk
- 1 3/4 tsp. baking powder
- 1/4 c. sugar
- 1 c. whole bran, shredded
Directions

1Sift flour, measure and resift twice with salt and baking powder.

2Cream butter and blend in sugar; add egg and beat until fluffy.

3Add bran and milk; stir until well mixed, then let stand a few minutes until bran takes up most of the liquid.

4Finally add flour mixture, stirring only until flour has disappeared.

5Fill buttered muffin pans 2/3 full.

6Bake in a moderately hot oven at 400° for 30 minutes or until muffins are nicely browned.

7Serve piping hot with plenty of butter.

8Makes 8 large or 12 small muffins.
