  • 4 eggs
  • 1 qt. buttermilk
  • 1 c. oil
  • 2 1/4 c. whole wheat flour
  • 1/4 c. wheat germ (may be omitted)
  • 2 1/2 c. all-purpose flour
  • 5 tsp. soda
  • 2 c. sugar (or half honey may be used)
  • 1 tsp. salt
  • 1 (16 oz.) box bran flakes

Directions

    Beat eggs; add buttermilk and oil.

    Stir in flour.

    Add soda, sugar and salt.

    Add bran flakes.

    Stir.

    Put into greased muffin tins.

    Bake at 375° until done.

    Keep unused batter in refrigerator and use when needed.

    A half batch may be made.
