- 1 12 cups wheat bran
- 1 cup skim milk
- 2 egg whites
- 13 cup unsweetened applesauce
- 1 12 cups whole wheat flour
- 12 cup Splenda granular or 24 (1 g) packets Splenda sugar substitute
- 2 teaspoons baking powder
- 1 teaspoon salt
Directions

1Preheat oven to 400 degrees F.

2Combine the wheat bran and milk in a mixing bowl.

3Let stand 2 minutes or until most of the moisture is absorbed.

4Add the egg whites and applesauce.

5Beat until well blended.

6Sift together the flour, sugar, baking powder and salt.

7Add the dry ingredients to the bran mixture and stir just until all are moistened.

8Spoon batter into muffin cups (3/4 full) and bake 25 minutes or until lightly browned.

9Serve hot.
