  • 8 slices bread
  • 1 tsp. cinnamon
  • 1/2 c. raisins (optional)
  • 2 Tbsp. melted margarine
  • 4 eggs
  • 1/2 c. sugar
  • 2 c. milk
  • 1 tsp. vanilla
  • 1/2 c. coconut (optional)
  • 1/4 c. dark rum (optional)

Directions

    Break bread into small pieces in a 1 1/2-quart greased baking dish.

    Sprinkle cinnamon, raisins and coconut over bread.

    Drizzle melted margarine over all.

    Combine eggs, sugar, milk, vanilla and rum.

    Pour over bread.

    Allow bread to soak up liquid well (can even refrigerate to bake later).

    Bake for 30 to 40 minutes or until firm at 350°.

    Top with whipped cream.
