  • 4 7/16 cups bread flour
  • 1 3/8 cups water
  • 1/2 teaspoon active dry yeast
  • 9/16 tablespoon salt

    In a bowl, mix 100 grams flour, 100 grams water, and the yeast. Let it ferment, until frothy.

    Add the rest of the flour, water, and salt. Knead by hand for 1 to 2 minutes and let it rest for 10 to 15 minutes. Repeat until the gluten has developed.

    Shape into a ball and placed in a greased bowl. Cover and refrigerate overnight.

    The following day, preheat the oven to 250 degrees Celsius.

    Remove the dough from the refrigerator and knead for 1 minute.

    Divide dough into 10 portions. Shape each portion into a rectangle and form the bun wrapping and sealing well. Place the rolls on a linen cloth with a dusting of flour. Then cover with plastic or a damp cloth.

    Heat the oven to 250 degrees. Bake 15 minutes at 250 degrees.
