- 2 green onions, chopped
- 1 cucumber, sliced
- 3 medium tomatoes, cut in wedges
- 1/4 c. chopped parsley
- 1 clove garlic, crushed
- 1/4 c. olive oil
- 1/4 c. lemon juice
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. chopped mint (optional)
Directions

1Break the bread into small pieces and place in large bowl. Add other ingredients and mix well.

2Chill and serve as light lunch or as a salad.
