  • 6 pork chops, cut 1-inch (2 1/2 cm) thick
  • 1 1/4 c. Italian dry bread crumbs
  • 4 Tbsp. fresh lemon juice
  • 1/2 c. olive oil
  • salt and pepper
  • 1 egg, lightly beaten
  • 1 Tbsp. water
  • 1/3 c. freshly grated Parmesan cheese
  • 2 Tbsp. chopped fresh parsley
  • 2 Tbsp. butter

Directions

    Combine the lemon juice, 1/3 cup olive oil, salt and pepper. Marinate chops in mixture for 2 hours.

    Drain the chops and pat them dry on paper towels.
