Breaded Tomato Slices

Ingredients

  • 2 eggs, beaten
  • 1 Tbsp. milk
  • 1/4 tsp. seasoned salt
  • 4 tomatoes (medium firm)
  • 1 c. finely crushed saltine crackers (about 28 crackers)
  • 2 to 3 Tbsp. cooking oil
  • 1/2 c. shredded sharp American cheese (2 oz.)
  • pepper

Directions

    Combine eggs, milk, seasoned salt and dash of pepper.

    Cut tomatoes into 3/4-inch thick slices.

    Dip in cracker crumbs, then in egg mixture.

    Dip again in crumbs.

    In skillet, fry in hot oil until browned on both sides.

    Sprinkle with cheese.

    Cover; cook over very low heat until cheese is nearly melted.
