- 1/4 cup butter or 1/4 cup margarine
- 1/2 cup brown sugar
- 1 egg, beaten
- 1 cup old-fashioned oatmeal
- 1 1/2 cups mashed bananas (I used 3)
- 2 teaspoons vanilla
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup macadamia nuts
- 2 tablespoons flax seed meal
Directions

1Combine sugar and butter until creamy.

2Add egg, mix well.

3Add oatmeal, bananas, and vanilla.

4Combine remaining ingredients in a seperate bowl, and then add to banana mixture until just moistened.

5Prepare a loaf pan with cooking spray & flour.

6Pour in batter.

7Bake in 350 degree oven for 1 hour or until tester comes out clean.
