Ingredients
- 1 cup orange juice
- 1 cup water
- 2 ounces apricots, dried
- 1 pinch cloves
- 1 pinch cinnamon
- 1/4 teaspoon salt optional
- 4 ounces pearl barley
- 1/2 ounces butter or margarine
- 1 ounces nuts chopped, optional
Directions

1Add the water and orange juice into a saucepan.

2Cut the apricots into small pieces and add to the saucepan along with a pinch of ground cloves, cinnamon and salt.

3Bring to the boil over medium heat and add the barley.

4Cover, reduce heat and simmer for about 1 hour until the barley is tender and cooked to your liking.

5Check and stir occasionally adding more orange juice as needed.

6The liquid will be completely absorbed.

7Stir in margarine (or butter) and the mixed nuts.

8Serve hot as is or add a splash of soy milk as desired.
