Ingredients

  • 6 slices bacon, diced
  • 1 c. cooked ham, diced
  • 1 c. Monterey Jack Swiss cheese, shredded
  • 1 c. milk Cheddar or Longhorn cheese, shredded
  • 1/2 tsp. salt
  • 6 eggs
  • 3/4 c. milk
  • 1 1/2 c. plain flour
  • 2 1/2 tsp. baking powder

Directions

    Brown bacon until light golden brown; drain.

    Beat eggs until foamy; add milk, flour, baking powder and salt.

    Beat by hand until smooth.

    Stir in meats and cheese; blend well.

    Pour into greased and floured 9 x 5-inch loaf pan.

    Bake at 350° for 50 to 60 minutes (freezes well).

    Slice and heat in microwave about 15 seconds per slice.
