- 1 pkg. frozen diced, hash brown potatoes
- 1 (8 oz.) pkg. lean sausage
- 8 to 12 eggs (depending on number to be fed)
- 4 to 6 oz. Velveeta cheese, chunked
- 10 tortilla shells, warmed
Directions

1In a large skillet brown lean sausage.

2Drain.

3Remove from pan.

4Brown hash browns according to directions on package. Remove from pan.

5Beat eggs slightly and pour into pan.

6Cook slightly, then add cooked sausage and hash browns.

7Salt and pepper to taste.

8When eggs are firm, add chunked Velveeta cheese. Turn on very low heat and put lid on skillet.

9Prepare tortilla shells.

10Add filling, roll up and serve.
