- 6 eggs
- 6 slice bacon
- 2 medium potatoes, peeled and cubed
- 3 large tortillas
- 1 shredded cheddar cheese
- 1 sour cream, optional
- 1 salsa, optional
Directions

1Cook bacon in a small skillet.

2I prefer mine crispy so I can crumble it on the burrito but cook it to your preference.

3Drain on paper towels.

4You will use the bacon grease in the skillet to cook potatoes.

5Cook potatoes in the same skillet you used for bacon until tender.

6Drain on paper towels when done.

7Once the potatoes are almost done, scramble your eggs (I add a little cheese in with mine).

8When your eggs are fully cooked, you're ready to assemble your burritos.

9Divide eggs and potatoes into 3 equal portions.

10Put a portion of eggs, then potatoes, then 2 slices of bacon on each tortilla.

11Sprinkle cheese on each one.

12Add sour cream and salsa if desired then tuck the ends of your burritos, roll them up and enjoy.
