- 1 doz. eggs (large or x-large)
- 1 lb. sausage (hot or mild breakfast sausage)
- 2 Tbsp. jalapenos, finely chopped
- 1/2 c. chopped onions
- 1/4 c. green pepper, chopped
- 1/4 lb. Velveeta
- 1 pkg. (10 large) burrito tortillas
Directions

1Brown sausage and set aside.

2Beat eggs with fork (add 2 tablespoons milk) until mixed well.

3Cube cheese (for easier melting).

4Add peppers, eggs, jalapenos (optional), onion, cheese and sausage back into skillet.

5Over medium heat, cook and fold (frequently).

6Remove from heat when eggs are fluffy and completely melted cheese.

7With large spoon, place 2 heaping spoonfuls onto one burrito tortilla shell.

8Fold shell over egg mixture; fold in each end and roll.

9Serves 5.
