- 2 slices bacon
- 2 Tbsp. vegetable oil
- 2 large tortillas
- 3 eggs
- 1/8 tsp. ground black pepper
- 1/2 c. shredded reduced fat Monterey Jack cheese
Directions

1Cook bacon in nonstick pan until browned.

2Pour off fat. Drain on paper towel.

3Crumble and reserve.

4Heat 1 tablespoon oil in pan.

5Add tortillas, one at a time, cooking for about 30 seconds or until softened, turning halfway through cooking.

6Drain on paper towel.

7Beat eggs and pepper in small bowl.

8Heat remaining 1 tablespoon of oil in pan over medium heat.

9Add eggs and cook, stirring just until set.

10Sprinkle cheese down center of tortilla.

11Top with eggs and bacon.
