Ingredients
- 20 flour tortillas
- 12 to 15 eggs
- 1 lb. sausage
- 1/4 c. jalapenos, diced (optional)
- 2 c. grated Cheddar cheese
- salt and pepper to taste
- 1/4 to 1/2 c. milk
Directions

1Brown sausage; crumble, drain and set aside.

2Stir together the eggs, milk, salt and pepper until beaten well enough for scrambling.

3Stir in jalapenos and sausage.

4Spray skillet with Pam; cook just as you would scrambled eggs.

5Lay flour tortilla flat; fill with a spoonful or two of egg mixture.

6Add a spoonful of Cheddar cheese; roll up in tortilla shell.

7These may be heated in microwave, one or two at a time, for a few seconds or until cheese melts.

8Serve with salsa on top, if desired.

9You may halve this recipe, if you wish.

10Refrigerate leftovers in airtight container.
