Breakfast Casserole

Ingredients

  • 4 c. cubed bread (French is best)
  • 2 c. shredded cheese
  • 2 c. egg substitute
  • 2 eggs, beaten
  • 1 qt. milk
  • 1 tsp. dry mustard
  • 1 tsp. Worcestershire sauce
  • black pepper to taste
  • 1/2 lb. bacon or sausage
  • 4 to 5 green onions, thinly sliced
  • 1 c. sliced mushrooms
  • 2 medium tomatoes, peeled, seeded and chopped

Directions

    Grease a 9 x 13-inch pan and arrange bread cubes along bottom. Sprinkle with shredded cheese.

    Mix egg substitute, eggs, milk, mustard, Worcestershire and pepper.

    Pour evenly over bread. Sprinkle with bacon or sausage chunks, onions, mushrooms and tomato.

    Cover and chill for 12 to 24 hours.

    Heat oven to 325° and bake for 1 hour or until set.
