  • 1 doz. eggs
  • 1 large pkg. hash browns
  • 2 big slices ham (can use bacon)
  • fresh mushrooms, sliced (optional)
  • bell peppers, chopped (optional)
  • onion on potatoes (optional)
  • diced Ortega chilies (optional)

Directions

    Scramble eggs with a little milk and butter.

    Lightly brown hash browns.

    Cook ham or bacon.

    Use lightly greased pan, 13 x 9-inches.

    Add potatoes, meat, vegetables, eggs and cheese in layers.

    Bake at 350° for 30 minutes.

    Can refrigerate overnight before baking.
