- 2 big slices ham (can use bacon)
- fresh mushrooms, sliced (optional)
- bell peppers, chopped (optional)
- onion on potatoes (optional)
- diced Ortega chilies (optional)
Directions

1Scramble eggs with a little milk and butter.

2Lightly brown hash browns.

3Cook ham or bacon.

4Use lightly greased pan, 13 x 9-inches.

5Add potatoes, meat, vegetables, eggs and cheese in layers.

6Bake at 350° for 30 minutes.

7Can refrigerate overnight before baking.
