- 2 c. (12 oz.) frozen hash brown potatoes
- 2 Tbsp. butter or margarine
- 1 tsp. salt
- 1/4 tsp. pepper
- 8 Eckrich Smok-Y-Links, sliced
- 2 Tbsp. green pepper, finely chopped
- 6 eggs
Directions

1Using a large skillet, brown the potatoes in melted butter. Season with salt and pepper, then stir in sausage and green pepper.

2Beat the eggs until light.

3Pour over mixture and cook, stirring frequently, until eggs are thickened but still moist. Makes 4 servings.
