- 1 lb sausage (as spicy or mild as you like)
- 2 cups new potatoes, peeled and chopped
- 2 ounces red peppers, chopped
- 2 ounces sweet onions, chopped
- 6 eggs
- 1 fluid ounce table cream
Directions

1Crumble sausage into large skillet.

2Add potatoes, peppers and onion, and cook over low heat until sausage is browned and potatoes are fork-tender, stirring occasionally.

3Drain off any drippings.

4Whisk eggs and milk in small bowl until blended.

5Add to sausage mixture; scramble until eggs are set but not dry.

6Serve hot, and refrigerate leftovers.
