  • 3 c. cooked rice
  • 1 c. shredded Cheddar cheese
  • 1 (4 oz.) can green chiles
  • 1 (2 oz.) can diced pimentos, drained
  • 1/3 c. skim milk
  • 2 eggs, beaten
  • 1/2 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • vegetable cooking spray

Directions

    Combine rice, 1/2 cup cheese, chiles, pimentos, milk, eggs, salt, pepper and spices.

    Spray muffin pan and fill 12 cups with mixture.

    Bake at 400° for 15 minutes or until set.
