- 1 c. shredded Cheddar cheese
- 1 (4 oz.) can green chiles
- 1 (2 oz.) can diced pimentos, drained
- 1/3 c. skim milk
- 2 eggs, beaten
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- vegetable cooking spray
Directions

1Combine rice, 1/2 cup cheese, chiles, pimentos, milk, eggs, salt, pepper and spices.

2Spray muffin pan and fill 12 cups with mixture.
