Ingredients

  • 2 c. flour
  • 1 1/4 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 1/2 tsp. salt
  • 1 1/2 c. shredded carrots
  • 1 1/2 c. peeled, shredded apples
  • 1/2 c. raisins
  • 1/2 c. chopped walnuts
  • 3 beaten eggs
  • 1 c. oil
  • 1/2 tsp. vanilla
  • 3/4 c. coconut

Directions

    Combine 1st 5 dry ingredients in mixing bowl. In separate bowl combine carrots, apples, raisins and walnuts.

    Stir in eggs, oil, vanilla and coconut.

    Add this mixture to dry ingredients until thoroughly moistened.

    Pour into muffin tin sprayed with no stick spray.

    Bake at 375° for 18 to 25 minutes.
