- 2 c. flour
- 1 1/4 c. sugar
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 1/2 tsp. salt
- 1 1/2 c. shredded carrots
- 1 1/2 c. peeled, shredded apples
- 1/2 c. raisins
- 1/2 c. chopped walnuts
- 3 beaten eggs
- 1 c. oil
- 1/2 tsp. vanilla
- 3/4 c. coconut
Directions

1Combine 1st 5 dry ingredients in mixing bowl. In separate bowl combine carrots, apples, raisins and walnuts.

2Stir in eggs, oil, vanilla and coconut.

3Add this mixture to dry ingredients until thoroughly moistened.

4Pour into muffin tin sprayed with no stick spray.

5Bake at 375° for 18 to 25 minutes.
